ENSEIGNER LA PARTIE OLFACTIVE DE L’ANALYSE SENSORIELLE DES VINS « LE SENTIR ET LE DIRE »

Abstract : The mind map of aromas is an innovative tool in learning the description of wine olfactory sensory analysis. We import the concept of instructional design to observe the effects of the use of this mind map on the teacher and students alike in a first-year hospitality & catering technological baccalaureate. Using this instructional design, a comparative study in learning sensory analysis with two comparable groups of students of a hospitality school reveals the effects the aromas mind map has on learning. The mind map has changed the teacher’s lesson time management. It generated a more complete use of specific words. It has increased the interactions between students and teachers. Among learners the mind map of aromas has caused more complex, structured and detailed descriptions. Effects on the identification of aromas and the facilitation of learning are also discussed in this study.
