Fournir la restauration collective en AB : proximités et territoires d’action

Abstract : The strong demand for organic products in collective catering leads to the emergence of differentiated supply strategies. Using the theoretical framework of the COTA, the analysis of examples in the Midi – Pyrenees région brings out a typology of the strategies of actors according to their degree of territorial insertion.
