La « modernité alimentaire » dans les territoires français d’Outre-mer

Abstract : In France, the industrialization of the food chain and the massification of distribution have considerably changed the food habits. In French oversea's territories, where very rapid transformations, even more than those affecting France, have intervened in lifestyles and the food environment, how are shifts occurring in food models? We propose to come back on the data collected in two French oversea areas, French Polynesia and La Reunion, around two dimensions: the number of daily meals and the values related to food.
